Lamb And Pumpkin Curry

1 Red onion,halved and sliced
2tbsp Sunflower oil
2 x 250g of Diced lamb
1 Clove garlic,finely choped
3tbsp Thia red curry paste
2tbsp Thia fish sauce
1tbsp Brown sugar
2tbsp Lime juice
400ml Can coconut milk
500g Pumpkin peeled and dreseeded cubed
Mangetout
Fresh coriander and boiled rice to serve
1) Heat half the oil in a pan,add onion and cook until soft.Remove and set aside.Add rest of oil to the pan add cook lamb in batches until brown on all sides.Add garlic and cook for 1 minute.
2) Return onion and all lamb to the pan.Add curry paste ,fish sauce,sugar,lime juice,coconut milkand 300ml water.Cover and simmer for 30 minutes.
3) Add pumpkin make sure the liquid covers it if not add more water.Cover again for 25 minutes.
4) Add corn and mangetout and simmer for 5 minutes.Garnish with coriander and serve with rice.
